250 g butter
4 eggs (at room temparature)
265 g granulated sugar
300 g all purpose flour + 1 tbsp
1 tsp vanilla extract
2 tsp baking powder
1 dash salt
250 g frozen raspberries
Cream Cheese Frosting
100 g sugar
140 g heavy cream
1 tsp vanilla extract
1/8 tsp kosher salt
225 g plain, full fat, Philadelphia cheese
Raspberry Syrap
200 g frozen raspberries
90 g granulated sugar
Raspberry Dream Cupcakes
Inspired by one of my daughter's favorite Swedish recipe, Hallonrutor, or Raspberry Squares. I changed it up a bit by turning it in to a cupcake of sorts, added a creamy cream cheese frosting and drizzled with a homemade Raspberry syrup.
