DIRECTIONS
Combine almond flour and confectioners' sugar in the bowl of a food processor. Mix briefly.
Add the egg white, salt, and almond extract, and keep mixing until all the ingredients come together and it forms into a shapable ball.
Remove the almond paste from the processor and shape the paste into a log.
Double wrap it in plastic and refrigerate until ready to use.
INGREDIENTS
170 g almond flour
170 g confectioners’ sugar
¼ tsp salt
1 ½ tsp almond extract
1 egg white

In Sweden you can find ready almond paste (mandelmassa) available in most stores, however, it might not be available where you live, so I put together a quick an easy recipe to make your own.
